Recipe for Health: Fresh Peach Salsa
Fresh Peach Salsa
(Makes Four Servings)
3 fresh peaches, peeled and diced
1 tablespoon of honey
1 teaspoon lemon juice
1/3 cup finely chopped sweet onion
1 jalapeño or Serrano chili pepper, finely chopped
2 tablespoons flat leaf parsley, chopped
1 avocado, chopped
- In a small bowl combine peaches, honey, lemon juice, onion, jalapeño or serrano pepper and parsley. Mix together.
- Add avocado. Gently toss into mixture.
- Serve with tortilla chips, or on top of grilled fish, pork or chicken.
In the Kitchen
Add peppers to vegetable sautes, corn bread, curry and Latin dishes. Use care when handling fresh chili peppers. The capsaicin compound can cause a sever burning sensation if it touches your skin, lips or comes in direct contact with your eyes.
In the Garden
Chili pepper is a companion to tomato, green pepper, okra, cucumber, eggplant, escarole, Swiss chard, squash, basil, oregano, and parsley. It is a competitor to beans, broccoli, cabbage, cauliflower, and fennel.
